those multi-in-1 boards often have a dip switch you have to adjust for it to output either VGA (in the case of a computer monitor or tri sync arcade monitor), or "15k" for output to a standard res arcade monitor through the jamma harness connections...
all the arcade monitor needs for video is Red, Green, Blue, Ground, and Sync to operate. your multi-in-1 board should have come with a book with a diagram of the JAMMA harness and it's connections. if for some reason it didn't, here's one:
