I used 2 part epoxy (basically what modpodge is) on a desk I built. It was hair raising to work with (you only have a limited working time, it's messy, anything it gets on accidentally is toast, you have to be DAMN sure the stuff is +completely+ mixed, etc etc) but the results have been quite nice.

It does scratch to an extent, so there is that, although supposedly, a blowtorch and a skilled hand can take scratches out quickly.
And you aren't supposed to set hot beverages on it because it can soften, though I haven't noticed that.
I think the main thing is what are you pouring it over? Vinyl artwork? stained wood? laminate? You won't be changing out artwork once it's poured so there's that as well. I'd do a small test pour over as sample before committing.
And finally, If you're building a traditional full size cab, I don't believe there's a single commercial unit that ever finished the CP in that manner, so it won't look "traditional", if that matters to you.
But, from the experience I've had, I think it would work perfectly well.
