wheels / pedals / shifter config

I picked up old off road controls (3 wheels, 3 pedals) that I'd like to add to my mame cab.  Pulled apart the pedals and there were very old pots (amonst other scary things) in there.
Also picked up a 4 way shifter.
1) any reccomended replacement pots (for use with mame)?
2) I've an ipac and optipac usb - any reccomendations on how to wire/configure the wheels and pedals?  I've found some old mame patches, but not sure if they work with the new versions or not.
