The only touchscreen games in MAME worth mention are the TouchMaster series by Midway.
They are ok, but a bit outdated and not as good as the Megatouch ones in my opinion.
You won't find any emulators or bootleg versions out there for anything more recent.
The few people on here who built dedicated touchscreen setups loaded up on PopCap flash games.
The light gun games will all work.

Personally, I'd load it with
eTouch jukebox and mount it on the wall.
(I use thepcjukebox, but it's pretty ancient at this point)
Or build a tabletop frame and do both that and the PopCap games
I prefer to be sitting at a bar or table to play touchscreen games rather than standing at a cabinet.
