Can you still use the control panel if one of the daisy-chained ground wires broke? or is that extremely unsafe to use? (it would only be that way tonight)

Whatever buttons that are not grounded will not work.

Some buttons will not work unless the ground wires are grounded at both ends.  That way a single broken wire will still allow all buttons to work.
