I'm thinking about building a cocktail cabinet for my first one because it seems easier to do than a full size or a bartop.

But the only monitors I have available are some 15" CRTs or 19" 4:3 LCD.  I'd really like to not use the LCD as it is my second monitor for my PC right now and I don't have the money to pay up for another matching 24" Hanspree.

Would the CRTs be too small for a head to head cocktail?

For what its worth, the original Atari head to head cabinets (centipede, etc.) used 13" monitors. I would say it depends on the design you are looking for.

I'm refurbing a thrashed Missile Command cocktail, and I'm using a 15 inch CRT. Works fine. I made a custom monitor mount for mine.

As far as design I just want a standard run-of-the-mill cocktail.

Also whats the earliest version of MAME that supports the split screen head to head mode for non cocktail games?

And my final question of the night...  Would a 2.2ghz dual core AMD 3700+, Win XP, 3GB RAM, Geforce 6800GS be able to handle games like KI 1, and MK3 in split mode?

I have used 15" crt PC monitors in the place of 13" arcade monitors, they are really nearly the same size as crt PC monitors used the cheating method of measuring the size that inflated the measurement.

Coincidentally I also have a rather thrashed Missile Command cocktail sitting in my shed, although all I am missing is the top glass.

Yeah, that top glass is a ---smurfette--- since the art was screened onto it. I'm going to turn mine into a MAME cocktail since it was missing so many parts and literally falling apart when I got it. The MC parts I CAN use are going into my MC upright refurb.

I think Mame version 107 is the earliest version that supports head to head.

Where are you located?  I have two spare 15" CRT monitors.  I also have three 4x3 17" LCDs and two 4x3 20.1" LCD monitors.

The 17" monitors have a thin bezel and can fit almost anywhere.  Measurements edge to edge:  14.25" x 11.75" x 2.25" deep.  The LCD screen itself measures 13.5" x 10.25".  They are also viewable from all angles without "appearing black".  Since the 17 inchers are so small, each one will probably fit into a flat rate priority mail box (without the stand - but you won't need the stand for your build).  Model:  EIZO Flexscan L568  http://www.pcworld.com/article/119419/article.html
