has anyone had any experience with these sticks? I want to have a stick that can switch between 4 and 8 way so that the cabinet is as versitile as possible :)

If you need analog control, go U360, for instance to play star wars or driving games with the stick.  if you only care about 4-8 way digital, the servo stick is the way to go.

I noticed you had the U360 in your cab (very nice build btw) does it have the same feel as a classic joystick (almost like a click when you move it?)

The feedback is linear until you hit the restrictor.  There are no clicks because no switches are involved, the stick measures position with magnet/induction.  It is also a very light spring pressure returning to center compared to typical arcade sticks, although light, medium and heavy springs are available.  Search here on "U360 review"- there are some good reviews that were done a few years ago when the U360 came out. 

I like the u360 but if 4/8 way servo sticks were available when I built mine, I would have gone that way.  I have a dedicated analog trigger stick (flight stick) on a swap panel for the few times i need that.  If you like Q-bert a lot it's great due to a diagonal map you can use.
