I'd say the last thing you did is the issue. If indeed the resistors where the last thing to be replaced before it stopped responding, Your issue lies there. You are sure they are of the proper specification and rating to the old ones.
a small amount of hiss is normal in older amps. It's just because there is a small amount of voltage that leaks past the transistors. Without diving into physics and other mumbo jumbo... It's usually the mylar caps and the old high ESR caps starting to break down that causes a little bit of noise to go through the preamp and be amplified.
