I'd guess that the wire is copper and the insulated coating is teflon.

Stranded works, but I think solid core is easier to work with. However, if the wire will be "bending" alot (say connected to a joystick's topfire button) you'd want to use stranded. In cases where the wire will be basically stationary, I don't think it really matters.

Just about any home depot type store should sell some. I know Kneviel has found solid core "doorbell wire" at home depot that looks quite nice.

I generally prefer stranded when doing hookups.  It stands up to repeated flexing better and tends to hold crimps better.

The Teflon insulation is good in high temperature situations.  It can be a little difficult to work with unless you've got a rather good wire stripper.  It's also usually kinda expensive.  Probably better to just find standard PVC insulated wire.

22AWG is a good choice for general hookup in an arcade cabinet.  For power, use 18AWG.

I agree, best off sticking with standard pvc insulation.
20 awg is what was typically used in real arcade cabinets (with 18awg for power conductors) but 22awg is fine.

I would definately advise against using solid conductor cable, especially a thin gauge like 24awg (used in cat 5 cable)

Thin solid gauge will very easily break over time and crimp-on connectors are not meant for solid core wire,
Though if you must use solid core wire with crimp-ons, you can also solder the connector after crimping.

Bob Roberts has wire and he is great to deal with.

Yes 18 GA is the same as 18 AWG (American Wire Gauge).
For LED power, you'll be fine with the 20 or 22 gauge wire.
When talking about power and 18awg wire for arcades, its talking more about power for actual arcade machines, such as the +5v, -5v and 12v used in arcade machines.
For Mame, you'll be fine with the 20 - 20awg cable.
