If you want to try something that doesn't require a lot of woodworking, North Coast Arcades, formerly Mameroom, sells a wall mounted jukebox kit, that you just put together like a bookshelf. I'm ordering one from them myself, for a project I'm building for a friend.
www.maeroom.comFor a touchscreen, I would look on Ebay. There are often a lot of good deals there. Lately there have been a number of people selling used open frame touchscreens, pulled from photo kiosks and such, that are perfect for this kind of project.
Pushbuttons, lights, and misc, you want Happ Controls.
www.happcontrols.comDon't forget an I-Pac.
www.ultimarc.comAs for software, there is a very comprehensive list on the wiki.
