Project 64 has the most games that are considered Compatible. The Keys are remappable for a Cab, although the exit keys are not (Alt-f4). Not quite sure what other N64 EMUs are out their, i have been using this one since before i had a Cab.

1964 is also very compatible (over 100 games), though not quit as compatible as Project 64. 1964 is a little faster, so if it plays what you want, it might be the way to go. I'm currently trying to decide which to use in my cab. I recommend trying both. There are other emulators, but these two are the best. Get them both here:
