Arcade Style Flight Simulators?

I try to feature a range of gaming types at my anime and gaming events.  Especially those fun arcade style gimmicks, light guns, racing wheels, stuff like that to make it more fun than 'a controller' in your hands.  One thing I wanna get into would be flight games.  Something like Sega Strike Fighter comes to mind.  You know?  Sit down, minimal instructions, grab the stick, blow the crap out of things untill you die or run out of time!

The closest I can come up with is Ace Combat on PlayStation 2, however their arcade modes are very limited and only Zero and 04 feature multiplayer mode by split screen.  I'd really like something with head to head or co-op features but tat's not necessary.  I'm not picky about platform, anything 6th generation or later or even just for PC would be great.  If I can find the right game, then I find fight the right flight stick for that platform.  Due to quality flight stick costs, I'd rather not choose the stick will I have a solid game to run.
