What are the advantages and disadvantages of them as regards display and controls.

Not to make your choice harder, but I've been thinking about using a Linux box instead. Have you thought about that?

It seems like the AdvanceMame and AdvanceMenu projects are pretty stable.

DOS pros: small, fast boot
cons:  made for alod architecture, can't really handle anything above 256 megs of memory:)  Was not designed for today's stuff.  no USB.

Windows Pros:  Lots of FEs.  Get all of the features of mame and other emus.  

Linux cons: no good frontends.

Agree with what SirPoonga said above.  Also, I am not sure if Dos does hardware stretching in MAME or not.

gxmame, it's the mame32 of linux.  I use it right now on my cabinet.

Actually, there are a couple good ones for X.  What I'd like to see are some for svgalib, but there aren't any that I'm aware of.  (except AdvanceMenu)

i use windows 98 se with arcade os... seems to work good and the statup isn't insanely long...

The Game Launcher site (http://www.dribin.org/dave/game_launcher/) says that there is a unix/linux version.  It looks like you may have to compile it yourself, though...I haven't tried to run MAME on linux yet.

I just took a sneak peek at the source...I can't tell whether or not it uses X or SVGALib.  If I were a programmer, it'd be easy, I'm sure.
