some questions about ArcadeVGA,J-Pac and more

Hello all!
Im completely new to to the world of Arcades and the likes.

I am a young IT developer that lives in the Netherlands and recently bought a jvh royal video big Arcade.

Now I am busy with configuring it and editing some of the options.
I read the FAQ about V-hold and H-hold and such but cant seem to find my solution.

situation: I have a J-pac and an arcadeVGA 1. the ArcadeVGA is installed and I can select all sorts of resolutions, I selected 640*480(Or something like that at least.) Now whenever I try to run a game or run something on a different resolution the screen flips out and I have to use the pots to change it around again. Why does this happen? and is there a way to fix this? it seems everytime the V-hold is off...

will using the avres application fix this for every game? Or will I need to reajust the pots for every game?

you need to use the ultimarc av res tool on there site.

you also need to setup mame with the settings on their site otherwise you will get the flipping screen.
