I want to be able to hunt and peck about games without coming back to a previous session. Basically, I want to play galaga, then pac-man, and then go back to galaga without revisiting the level I last played.

Go to Options -- Default Game Options -- Misc -- turn off Save Game State on Exit (this option is not on by default, so you must've turned it on at some point)
