Virtua Fighter PC - How to map controls for Cabinet

I have virtua fighter 2 PC, how can I map the controls to suit my cab - my control panel uses keys such as shift and space as buttons through its keyboard encoder, I cant find a way of specifying these buttons in the options of the game.
Also how can I get it to quit upon pressing escape?
