Is there a way to keep the volume setting set so each time I play MK 2 or 3 the volume doesnt reset to the low level?

Are you setting it with the MAME ~ control or in the game settings (F2)?

I would like to know this as well, but not with MAME.  My mortla kombat 2 arcade machine changes its volume level back everytime I shut it down and back on.

I think the key here is you have to save the settings upon exit by actually selecting the "exit test menu" and letting the game reboot properly rather than just turing off the test switch.  It saves for me every time.  This should hold true for the real pcb as well.

Not saving on this end. I press F2 to go into the system menu, then turn the volume all the way up, then exit the menu. The sound is fine then, turned up. Then, I restart the rom by press ~ then reset rom. The sound is back down again, but when I go in the system menu in MK2 its all the way up... so something is messed up.

Yep, same thing happens to me with Mortal Kombat 2.  I've tried pretty much everything.
