Nobody plays PS2 analog games in an arcade cabinet...or at least any game that doesn't also support digital controls.  Of course you can still hook-up to the analog potentiometers and buy a pair of Happ Analog sticks with ultimate handle (http://www.happcontrols.com/joysticks/50287600.htm) for $123 each if you want  ;D.

The Quasimoto cabinet http://www.quasimoto.com/ has analog controls that function with PS/2 and Gamecube. Does anyone know what analog sticks they are using? I'd be interested in building a Gamecube cabinet with analog controls.

I played a Quasimoto cab a year or so ago, and the controls felt pretty good. Kevin has a positive review at RetroBlast as well.

I saw a pair of analog sticks that look similar to the ones that Quasimoto sells go on ebay recently.  They were still fairly expensive though.  You could always build your own analog sticks.  You could try and build some handles that could clip on to the origonal analog sticks from the Playstation controller and would basically just act as extensions.  Or I've seen people build some analog sticks out of one of these before.

The PS1 flightstick doesn't work with PS2, at least not in analog mode.

Correct.  But you can still use the analog sticks to hack to a dual shock controller.
