Thanks for the compliments and the input on the booths. You all bring up a lot of points that I considered when building them.
It's ironic that a couple of you mention the cocktail game, as that is just a temporary setup. I am going to build a large table which would consume all the space between the seats and give plenty of space for food and drinks.
As far as the dims... I made them 48" wide because that is what would fit in the spot. It is also a pretty standard size. I made them about 42" tall, the seat around 18" tall and about 22" deep. This was based on the AMC website:

There are some outer dims on their booths on that website. They have a couple of similar booths, which I based the design loosely. Check out their Outback Steakhouse booths in the example section, these are probably the closest to what I built.
As far as comfort. I would like to have padded seats, but I knew that would probably be another project. And I noticed some of the booths at restaurants aren't padded. So I tried to make them as comfortable as possible, but be easy to add a cushion to later. I curved the seat bottoms slightly (the wood is split and has a seam going longways) so they would be more comfortable. I might add cushions eventually, but honestly they are quite comfortable as-is. That said, I have only sat on them for short periods at a time. We'll see if anyone complains after sitting there for a couple of hours.
The backs are perfect. When drawing it up, I was afraid I had layed the backs down TOO much. If you look at the similar booths on AMC's website, the backs are nearly upright. Mine are titled back about 3 inches or so. This is about as low as you'd want them, anything more and you'd feel like you were reclining or slouching too much. I noticed some booths in a restaurant recently were straight up, but it was noticable and not perfectly comfortable.
I'm real happy with the feel and function of the booths. My biggest complaint right now is the lack of a big table and the lack of a platform to cover the missing carpet on the floor.
