Is it possible to hook up two real phones with a "crossover" cable and a power source (preferable safe and low power), so that kids could pick one phone up and talk to the other phone?

Yes it's possible. Check out
www.howstuffworks.com
and look for "How telephones work". A little into it, it shows you that all you need to do is splice the wire and add a 9v battery in there....tada

man that brings back memories. I grew up with party lines.
My girlfriends parents were the other party. We (my old girlfriend and I)
figured out that we could pick up the phones and wait out the dial tone and talk all night and no one knew. The phones never rang. we did this all through high school. ( we invented phone sex)
