Saving high scores and NVRAM

My Mame cabinet saves high scores OK with the hiscore.dat file installed for most games. Some games like Qbert will save the hiscore, but then after a couple of weeks the scores reset. I know that this is down to NVRAM and I accept this..... but I don't understand the reasoning. If they save then why don't they STAY saved?  Is there a way around this? Can someone explain in laymans terms what NVRAM is and how it works?

Also is there a way to get Crazy Kong on Scramble hardware to save its scores? Every other Crazy Kong and Donkey Kong will save, but not this one.  Is it just that nobody has got around to doing this game, or will hiscore.dat simply not work with it?
