Can this be done with a dremel using the circle cutting guide and the multipurpose bit?  I don't have a hole cutter that large (the biggest I have is 2").

Well, I've never tested it... You should just play it safe and buy a new circle cutter.

well...i tried cutting it out of a small piece of lucite (6" x 6") and it warped the circle.  This happened because I didn't clamp the lucite onto anything...it was being held freehand (actually...the dremel was in one hand, while the other would rotate the 6"x6" piece of lucite).....

I think if i clamp the lucite onto a piece of wood that it should be fine.

Any comments / concerns?

TELL ME ABOUT IT!!!!  :(

I picked up a forstner bit (thanks to the tip in the BYOAC book)....and it works so F'ing beautifully!!!  It's cool, cause when you're done, you're left with a thin little 1 1/8" token kind of thing......no use for it...but still cool nonetheless.

I recommend the Forstner bit for ANYONE who has a CP with any sort of button or joystick on it ;)
