Second Project starting now

I am almost finished with my icade build running pi 3. I am waiting for artwork and then I will post. It came out great. I am starting my second project which I intend to run hyperspin on. This is going to be a 2 player bar top. I started buying equipment for the cpu as I don't have an old computer lying around. I need to purchase a Quad Core Processor and looking for recommendations. Looking to run basic emulators such as MAME, SNES, Nintendo and SEGA, maybe Dolphin. I don't want to use the pi on this one as it seems to have problems with many MAME ROMS. Anyway, that being said, I do not need anything too crazy as I am not looking to run 3d graphics or PSgames. Any suggestions are greatly appreciated. Thanks in advance
