Rather than use trim when finished, I think I would make the whole thing from planed/jointed high end wood.

I built an "entertainment center" using a pocket jig.  However, I already had an alcove in the wall and was simply finishing it out.  its a glorified bookcase. i installed some led light strips under the trim. and im adding glass cabinet doors to the bottom 2 shelves, thats why the bottom shelf is recessed 1 inch behind the trim

Have u thought about encosing all ur equiptment where it is not viewable then use an IR extender. I have mine in my closet and all you see is the TV on the wall. You could still build an entertainment center though for the TV.

***Jennifer laughs, and laughs.... Whatever.... I wish it was that easy to kick the arcade thing, therapy maybe? ***Jennifer laughs some more,  OMG.... But anyway you would probably enjoy perusing a fine woodworking magazine (or two), Might even find the plans for your build.

I built a fish tank stand and used door casing trim around the top, here are some not so great shots of it, its only about 2 inches wide, might work for you?

Its basically only 3 assemblies joined together with a top board.... That top however will look nice if you do it like the pic, a bit wider than the cab sides.... See how easy that was, there's your accent trim. ;)

looking good.  For layouts on plywood I use a simple program called Cut List where you input your sizes and what wood you have and it optimizes the layout.  http://www.delphiforfun.org/programs/cutlist.htm  There are more pro versions you can buy, but for simple projects this one works great.
My Projects:
MisSpent Youth a Vigolix bartop,  Little Bastard a rotating tablet/display bartop,
Pin-Dog a mini pin-cab on vpforums.org  Star Wars a wedgehead pincab on vpinball.com

If its not too late, have you considered modeling your TV, VCR and atari on the shelves to see how they fit?  Will you have enough shelves for all of the tapes?

Have you considered accent lighting for your gadgets?
