Do you guys run full sets or do you tidy up your lists and remove some of the stuff you know you'll never play? I was thinking of maybe shrinking my list down to a more focused and direct list.

I use a subset of about 120 games. I have the full romset of mame on the cab but my frontend only provides access to the sub set. This way I can easily add / remove games from the list (just updating the configuration file of hyperspin).

Unless I need to scratch a particular itch, I play the Byoac high score challenge. I'd be keen on a hyperspin wheel of just the challenges.
