I'm using this model in all my machines.  It goes on sale for this price a few times a year.
Oldest one is a few years old. Haven't had one die yet, but did have one DOA.
The replacement came pretty quick.

Cables are sleeved in black mesh loom and look nice.

I can vouch for the validity of these.  I bought one from this line sometime back.  The pc is junk at this point but the PS is still going strong.

If I didn't want to buy an arcade power supply for a restoration project, could I use one of these?

Probably yeah.  I think some of the negative voltages are missing from pc power supplies, but only the oldest of the old games use those.  You just have to jump a couple of pins on the wiring harness to turn it on.
