They are considered a delicacy food in some cultures. They are really good eggs, IMO, but they won't be too much different than a mini chicken egg. You usually want to soft boil them or hard boil them. I think they are sometimes pickled as well. They are often used as food toppings in some South America countries, and are eaten by themselves or in dishes in some Asian cultures.
If you want fine presentation, you will want marbled tea quail eggs. The basic method is to crack up the entire shell, but don't peel. Then you boil it in black tea. when it is done boiling, you peel it, and the egg will have a marble texture to it. There are more elaborate versions of of that basic recipe that you can find as well.
