The ultracade cocktail looks to have vertical monitor so to use it as a horizontal you will probably have to add an additional control panel for horizontal play. Or you might be able to live with the horiz display on the vert monitor. If it is working you have a control interface (usblinx) that plugs into a jamma harness. Are you going to try to use the existing computer or put in a new one?   Do you want MAME to use a split screen like the ultracade does when used with the player 1 and player 2 controls?

Feeding frenzy uses a mouse so you can play it with a trackball.  The horizontal panel will need a trackball if you want to play it full screen.   You might get away with playing it on the vertical screen depending on how large the horiz game shows on your vertical screen.

You will have to determine if your monitor is CGA EGA or VGA as the ultracade can support all 3.

If you set Mame to cocktail your horizontal games will be shown as split screen on the cocktail where 2 players can play at the same time. Not all games have 2 player controls so only those that do will work in split screen.

Your pics clarified you cab usage.  Forget everything I said about the ultracade since it is not longer there.   Your jpac and optipac are a great choice and should make it really easy to configure your cocktail with your LCD monitor.
