Easy office prank that working on MAME cabs made me think up last year:

Pick a coworker who is not computer savvy. When they step away from their computer for a minute, go to their display settings and set the display to view upside down. If they have dual monitors, set the second display to view sideways. Any computer with some form of real graphics card should have these settings.

I always liked the one where you do a printscreen, then set that image as the desktop.  Then you right click on the desktop, go to view, then uncheck "show desktop icons"
