What OS to use, and how to customize it?

My game can run on WinXP, Mac and GNU/Linux...

But what OS I should use, and what I need to edit, to make it cab-like? (ie: you boot the PC, and it boots directly on the fullscreen game, showing my own custom screens while the game is not running yet)

XP seems to be the easiest to hide.  Plenty of info in the wikki.
