What is the best golf game you can play on a cab w/ a trackball?  Tiger 08?  One of the Golden Tees?  Other?  Are there any PC games that you think are must haves on a cab?

I like Golden Tee (there's only one PC version that I know of) because it works well in a cab, and it's arcadey. However, it's not as arcade-friendly as the Mame versions since you have to use the mouse pointer and button to click certain buttons in the game (like aim left/right), whereas in Mame, you can assign these to your buttons. Too bad IT doesn't produce an updated GT for the PC.

My favorite PC golf game is Links 2003. The Links series has always been my favorite, and Links 2003 features the RealTime Swing and Powerstroke. Links 2003 does work with a trackball, but you don't control the shape of your shots like you do in Golden Tee. It's more sim-based. Links would be even more great with all it's physics and features, in addition to a selectable Golden Tee swing mode. I also like Tiger, but it also isn't designed for the trackball like GT is.

I think you should give each of the above a try. They are relatively cheap and each has its strengths and weaknesses.
