Great idea, I hadn't thought of a PC in the interim. Good idea.
But I do have some solutions up my sleeve. I will try to re-seat all of chips first on the original PCB. Also, I am working on obtaining a backup PCB as well that is working.
As far as "MAMEing" it into something else though: Definitely out of the question. I want to restore it to it's original glory!
I took a look at it last night. Wow, huge is an understatement! It's monstrous! But it does indeed come apart as Peale suggested. The front panel has 6 screws holding it on that are accessible by lifting up the hinged control panel and climbing inside (yeah, an adult would fit in there without any issues). The monitor on the back also has a box which is also removable. I plan to grab it in two stages. The Control panel in the back of my SUV and the other chunk in a friend's pick-up (not full size unfortunately, which is why we have to take it apart).
But I'm having trouble locating the replacement CPO for it. Anyone have any ideas? Mamemarquees.com only has the 2 or 4 player versions, not the 6.

What about a total reversible mame conversion, i mean just replacing the board with a PC that runs only the game that you are replacing (you will need 2 Jpac or Jammasd , or build your own preotection for from the 31khz to do that anyhow), you wiill have to build an adavper that feerd the viseo siognal from jamma ( or vga) to the screens and a keyboard encoder that will read the buttons . You can use this solution until you find a working board. but avoid any modification on the cab. Just use converters and please don't cut/hack anything.
