I am doing my research right now for a cocktail MAME cabinet. I was wanting to make it, for the most part, very authentic and wanted to have it be able to work either by inserting a quarter or by pressing a button on the side of the control panel (to simulate a coin). Is this something that is going to be a big pain? I will be using an iPac (most likely) for my two controllers and buttons (if this helps any).

No problem, mame defaults to using the keys 5,6,7 & 8 as coin inserts anyway, and the IPAC has (and needs to have) inputs for these.  Just simply hook up a button or the microswitch on the coindoor (or both in parallel) to the IPAC and away you go.

I wired the coin mechs on my Amazing Mame cabinet. I just ran the original coin door wiring directly to the Ipac. Just two wires, one goes to ground and the other went to coin1.

It really isn't any different than wiring anything else on your control panel.

I'd like to do this, but how can I tell which wires are the right ones? There are about 6 different wires?

Easy. See the little switches that the coins hit on their way down?

Those wire up exactly like the pushbuttons that you already have in your control panel.
