http://www.magicinkjet.com has a line of pressure sensitive (adhesive backed) large format inkjet media. I've never used them but here's a few descriptions from their web site.

vinyl overlaminates DMCVHO2 or DMCVLO2,
may be used for warranted vehicle graphics or
promotional signage.

a universal resin-coated photobase paper. Available
in gloss and low glare finishes.
HP makes a heat transfer media that might be useful
HP HEAT TRANSFER PAPER Q1739A
Description:
"A 7 mil, 140 gram media comprised of 4 layers: a base paper, a separation layer, a granular ink absorption layer, and a finishing layer. During the heat transfer the paper's absorption layer melts, creating a polymer-film and encapsulating the ink - then the base paper cold peels away easily.
http://www.charrette.com carries both Magic (Intelicoat formerly Rexam) and the HP media. Figure on at least $120 for a 50' roll minimum.
Maybe one of them will work for sideart.
http://www.ijsupplies.com/ij-pressure.html this place may have something that's more applicable to control panel art in 8.5" x 11"
A search for "inkjet adhesive media" turns up a lot.
