is it possible to use a medium res monitor with a modded xbox? cus that would make my whole project a lot easier (modded xboxes run MAME FYI)...

No, it would need to be a 15Khz standard resolution monitor, which is the same scan rate as a TV.
It might be possible to use a scan converter but not really a viable solution owing to cost and poor picture quality.
