I don't know if there is a button mapped for pause by default, but when playing games on my computer for testing purposes, the "p" key pauses the game.  I'm guessing you could map a button on a cabinet to do the same.

I just started playing with MAME & Mala this past week, so unfortunately I can't provide any more info than that.

Yea, you can make any key (or button) pause under the tab in mame. You can also make a combination of buttons, say player 1 start + another button pause the game, but most people opt for a dedicated pause button so you can hit it on the fly and make something like escape a two button combo so it doesn't quit when you don't want it to.

That's exactly how I have mine setup. I have a pause and a UI (mame ui window) button, which allows me to pause a game and confiure the keys. For exiting I have to press the pause button and the p1 button at the same time.
