Most of those only turn about 45 degrees though, how would games like pole position work? As long as its turned the car is in  turn?
In the arcades you just span it like a top

The old ones were more like 150 degrees.  Most common is 270 degrees (which is what both the happ and PS2 era logitechs are).
Logitech's current offerings are 900 degrees, but I never find myself using it.

Pole position doesn't work with any wheel that has limited rotation.
The center point of the wheel changes every time the car wrecks, so eventually it ends up too close to the end of travel.
You'll need to turn farther left, but the center point has moved so far left that there isn't enough travel remaining to make the turn.

Other 360 degree wheel games play OK.
It really varies by game and how the original game was designed to be played.
You can get by on Ivan Stewart's Super Offroad, but it's not great.
