I received a 500 GB external HD for Christmas which I was going to use as an archival/back-up for my PCs, and was wondering what software people recommend for that purpose.  Suggestions?

I haven't tried FOG, but I'm thinking of giving it a shot (although it's an imaging product, not true backup).

Try doing a google search for the latest version of hirens boot cd.  You will find nearly any utility you can possibly want to use on that cd.  This guy put alot of efort in the design.  You will find multiple disk backup/cloning utilities in there.  Just make sure you boot to the CD to get full functionality.  Thanks,
