The default MediaWiki skins are pretty generic looking (looks too much like WikiPedia). I'm not so familiar with MediaWiki, but there's got to be something a little less generic looking out there...

There are plenty. I haven't gotten to a point of putting any other skins in. The installation comes with 9 different ones by default. You can change them for your user profile.
