So I tried Venison jerky a bit ago from this fancy shop and boy oh boy..It tasted like liver. :P I am planning on BBQing this weekend and would like to try some different cuts of meat. Questions- does venison always taste a bit like liver or is this just the way it's cooked? My local butcher has Bear steaks, ostrich and I think gator. I like to be adventurous sometimes any suggestions?

Venison does have a bit of that livery texture but you probably got some crappy stuff.  With any game meat, read up on how to cook it, because if you don't do it well it will come out poorly.

I've been eating venison my whole life and never had any that tasted like liver... well, except for the liver. What you don't want to do with venison is overcook it, as it will turn to a substance that is very much like leather.

Gator is absolutely wonderful!.... Looks and tastes like fish but has all the texture of steak. Pan fried over a very low heat with a bit of Garlic and it's heaven on a plate.

I don't think it'd BBQ very well though.

I have had ostrich and it is very good. I thought it kinda tasted like steak with almost no fat. But it was prepared by a friend of mine who is a chef so...it could have been the wrap he used.

Oh yeah, I will take my time picking out a good recipe before I cook it. It's just that had I picked out venison as a meat then experienced liver again I would be very dissapointed. I am used to beef steaks and chicken. I enjoy beef and love the taste but want a stronger flavor without the liver taste.

It's actually very simple.  

Kill deer.
Clean deer.
Cut deer.
Put deer on a stick over fire.
Cook deer.
Eat deer.

Game should be cooked over a real fire.  You'll never get it wrong that way.

I've only had gator once, but that time it had a pretty nasty and very greasy aftertaste. This could very well have been the fault of the person who prepared it, but I have never been compelled to try it again.

Elk is very good, as is moose, but on the whole deer gets my vote for the best game meat.

I will try venison again. I will have to try it in the Embassy suites by my house. I don't know what is supposed to taste like so I will have someone show me.

Beaver!

Actually, a town not to far from where I want to college had a big creek / small river that emptied out into the Mississippi.  Every so often beavers would decide to dam this thing, which would flood a good chunk of town and about a zillion acres of farm land if not taken care of.  When this happend the county commissioner (or whatever it was they called this guy) would capture the beavers and release them elsewhere shoot the little ---daisies--- and put them in his deep freeze.  Then, some Friday, it was free Barbecue day at the county courthouse.

It had a texture like beef but was sweeter.

All this being said, for all I know this guy was a serial killer and we were helping him dispose of a missing sorority girl from two states away.

believe it or not, my father used to be a crocodile hunter. contrary to the 'crocodile dundee' image, many croc hunters were immigrants. 1) because if non-english background (like my dad) you could only get certain jobs 2) only immigrants were crazy enough to do it! anyway, he never, ever ate crocodile. said that after seeing the crap they eat there's no way he would try it. just left the carcass by the river for the next crocs to eat...
