I'm looking for the best console emus to add to my mame cab. I've tried quite a few but some don't allow you to quit very easily without a mouse or ALT+F4 type key combinations. I'm looking for a nes/sms/genesis/snes emu that you can configure to quit the game with the escape key like mame. Or better yet a modified mame to run those games. I don't play a whole lot of console but it's I have a few favorites i'd enjoy playing and when anyone knew sees the cabinet they usually ask if I have a few classic console games.

Go to http://www.screenshotarchive.com and check out the emulators in the "Links" section.  There are modified versions there that'll let you [ESC] out.

I use z26 for my Atari VCS emulation.  FCEU & zSNES for NES & SNES respectively.  

Right now I don't have any Sega or Gameboy emu set up, but am planning on adding them using the progs linked there shortly.
