Question on controls used in this epic 2 player bartop build

I would like to know what Joysticks and 2 1/4 inch trackball that is being used in this video:

I'm attempting to mimic something similar for my own home (just the top bartop piece for now, but if someone has plans for a nice stand like shown in video that would be great!).

I've heard that many of the 2 1/4 inch trackballs are not very good, they get clogged and you have to clean them a lot. Thoughts on this?
