use a double pole momentary switch so that they are each on their own and not touching each other just to be safe.

Yeah, it would need to be a DPST switch, you don't want those circuits connected to each other. Wire size... I'd say anything down to 26 gauge should be fine.

The only possible downside to this 2-in-1 switch design is when one is on and the other is off -- if you push the button, it will toggle both of them leaving one off and the other on.

One way this could happen is if the TV or computer powers up automatically when power is applied. (You did test them and check BIOS/menu settings already, right?)

I don't think them make those LED light ring buttons in a double pole config.

The search terms to use are "dpst" or "dpdt" and "vandal switch" -- Digi-Key has pretty good prices on them.

Pretty sure this one in blue will fit your needs -- datasheet here and schematic here.

If you find the switch you really want to use but its single pole,
You can always use a dpdt relay to split the two

White wire is neutral -- in plumbing terms, it's like a drain.

Black wire is hot -- in plumbing terms, it's like a faucet.

To turn the faucet on and off, put your latching switch on the black wire. (just like the two black wires on the rocker switch -- 3rd white wire is the return for the rocker switch LED)

Probably not -- it's definitely not needed if the surge suppressor strip has a built-in circuit breaker.

Has this reduced the effectiveness of the surge protection?
No.
