For example, can I test Asteroids or Omega Race on a WG6100?

I don' see why not. Just connect one of the color inputs (R,G or B) as the "Z"signal from the game board.

Of course then you have the game in that single color but that should be fine for just testing.
 It should also be possible to connect all the inputs together I think, to get a white picture.
