I'm also a huge fan of fighting games, SNK, capcom, even some Power Instinct Matrimelee if I'm bored enough. My personal cab is a modification of an original blank shell, but if I was going to build my cab from scratch I'd probably see if I can duplicate this guys cabinet:

One of the biggest problems with a lot of fighting cabinets, even in the arcades sometimes is the spacing between players. Every showcase cab I've used has had plenty of space between players, but some basic uprights are way too close like US neo geo cabs.
Lusid plans are great, I don't see anything wrong with them, just make sure your control panel has enough space between players, make a few test panels out of cardboard and get somebody else your size on the other side to make sure you're not hitting elbows or shoulders.
btw, if you're trying to decide on the controls, I'd go with competition joysticks (very quick response, great for fighters) and either horizontal or competition pushbuttons ( horizontal for concave, and compeition for convex )
