joysticks come loose

Buy some locktite at the hardware store. That's what's for. Put it on the threads and tighen it up. You could also try some finer threads. Big course threads come loose easier than fine threads.

Yes and if you are indeed using screws, I would suggest remove them, drilling out some holes and replace with carriage bolts.
The nuts (& bolts) I have are from Bob Roberts - they come with a little spinning-star-washer type-thing built-in, and so far seem to work a treat. As said Nylocks are great too :)
Stingray:
I'll second loctite. It does what the name implies. The only problem is sometimes you can't break it loose if you need to remove it for any reason.
