Paladin:
You could always get one of Jrok's JAMMA multi Williams boards.  Then all you need to do is wire it for JAMMA with a switcher.  You can still restore the cabinet to look like a Joust, but you'd be able to play Robotron as well.  I bought a similarly converted Joust, and went with the full multi Williams setup:
