Understandable, it is using the "american standard code for information interchange", not the australian one ;)

Know where you're going doesn't matter if you still don't know how to get there. How many people can count in hex? I figured that would be the stumper for most people and that mentioning ASCII wouldn't be a big deal.

True, but you google the thing and you get a lookup table, no need to know how to count in hex then, just find the match.

Here's an exed-out version of the sentence from jerryjanis' post:

It's simple substitution. The first thing I figured out was that "20" = "space" which is pretty obvious from comparing the code to the exed-out sentence.
The other bit of information you have to work with is that the message will tell you the flight yoke release date. With those 4 things, you should be able to crack the code in no time.... at least the vast majority of it and then one important specific character can be easily deduced.
