Newbie emulator question...

I'm just starting to get in to emulation and I'm thinking of building my own cabinet.  This website is awesome, I've already gotten tons of info, thanks a lot!

Here is my question... Are there any Nintendo or Genesis emulators that will exit by pressing ESC?  For example, I'm using NESter and it is in full screen mode.  When I press ESC I want it to kick back to AdvanceMENU... right now it just goes to windowed mode.  

Is there an option I can set to exit when ESC is pressed?  Is there another emulator I should be using?  Thanks for your help.
