Extracting data from an emulator

I'm looking for someone who could help with a bit of an ambitious project.

I'm using the MFME emulator and I would like to extract the data being fed to the vacuum fluorescent display.

The program has some great debugging tools but it's a bit above my skillset on where to even start.

The end goal would be to output the data to an arduino with a real vacuum fluorescent display

Yeah most outputs in the gambling games are already hooked up, you can check the source code of the driver to make sure.
